Saffron broth with white beans

A pot for a cold evening: beans soaked overnight, a pinch of saffron, and bread to wipe the bowl.

Serves four. Fifty minutes at the stove, a night for the beans.

Saffron broth with white beans

Written down on 16 February, after two trials and one burnt pan.

What you need

Ingredient Amount Unit Note
Dried white beans 300 grams soaked overnight
Leeks 2 whole white parts, sliced
Saffron 0.2 grams a generous pinch
Vegetable stock 1.5 litres unsalted
Olive oil 3 spoons and more to finish

Method

Warm the oil in a heavy pot and let the leeks soften without colour. This takes ten minutes and is not to be hurried.

  1. Crumble the saffron into a cup of hot stock and leave it to stand.
  2. Add the drained beans and the rest of the stock, and simmer until the beans give.
  3. Stir in the saffron and its stock, salt at the very end, and rest for five minutes.

Keeping

Better the next day. It keeps three days in the cold; on the label write broth 16-02 so that it is found again. More in the notes on keeping.
